Banana Delight

INGREDIENTS
Serves/Yields: 6
1 cup all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg
1 ripe banana
2 oz. soft butter
5 oz. sugar
1/2 tsp. vanilla
METHOD
1. Sift flour, baking powder, baking soda, and salt
together in container.
2. Blend egg, banana, butter, sugar, and vanilla for
a minute or until a smooth consistency is seen.
3. Then pour the mixture onto the flour mixture and
mix thoroughly but not for long or else you'll
lose the substance.
4. Grease an 8 inch layer tin and dust with little
flour.
5. Preheat oven to 375 degrees F.
6. Pour into greased tin and bake for 25 minutes
7. Cool on a wire rack
Now comes the Banana Cream.
INGREDIENTS
1 ripe banana
1 oz. sugar
1/4 tsp. nutmeg
1/4 pt. cream - whipped and chilled (you can substitute with evaporated milk)
Method: Blend banana, sugar, and nutmeg together
until smooth. Then add to cream and serve
with cake.
