1 Bunch thyme
3 inches ginger (peeled and sliced)
3 Scotch Bonnet peppers
2 to 3 crushed pimento berries
1 cup of sugar and 2 cups of water
1. Combine the sugar and water in a pan on the stove over medium heat and stir until sugar is dissolved.
2. Reduce heat and add the remaining ingredients.
3. Cover and allow it to marinate for 3 hours.
4. Add more peppers as desired.
5. Strain the mixture and bottle it..
